Dr. Good’s Protein Bars

Base ingredients

1 cup melted coconut cream or coconut butter (such as Nutiva coconut manna or Artisana coconut butter)

1 cup pitted dates

½ cup almond butter

2 tsp vanilla

¼ tsp salt

¼ tsp stevia liquid (I like Sweet Leaf vanilla crème)

Water as needed (approx ¼ cup)


Carob chips or chocolate chips or dried fruit

Any combination of nuts such as: almonds, macadamia nuts, pecans, pumpkin seeds

Shredded coconut


Mix all base ingredients in a food processor

Stir in any combination of additions that you like

Press into square dish or cookie sheet that is parchment paper lined

Freeze ½ hour and then cut into squares
